Stuffed acorn squash

Serves 4

Tip: Try this technique with other squashes or grains. Butternut or buttercup squash and brown rice or couscous are great options.

  1. Place 2 medium acorn squashes on baking sheet.
  2. Roast 30 minutes at 425 F.
  3. Add 1 tablespoon olive oil.
  4. Add 1/2 cup chopped shallots.
  5. Add 1/2 cup finely chopped celery.
  6. Add 1/2 cup finely chopped carrots.
  7. Add 4 cloves garlic.
  8. Add 2 cups chopped apples.
  9. Saute until tender.
  10. Add 1 cup cooked quinoa.
  11. Add 1/4 cup chopped unsalted pecans.
  12. Add 2 tablespoons chopped fresh thyme.
  13. Add 1/2 teaspoon sea salt.
  14. Add 1/2 teaspoon ground black pepper.
  15. Mix until combined.
  16. Stuff 1/2 cup mixture into each squash.
  17. Bake 5 to 10 minutes 425 F.
